Raw Vegan Chocolat Cake

Hi lovely friends! I hope you’re all having an amazing start to your week. I thought I’d start this week with a little treat. This raw cake is so yummy and incredible easy to make. No baking required. It’s refined sugar-free – Let’s get started!

  • 1 cup almonds
  • 1 cup pitted medjool dates
  • 1/2 cup walnuts
  • 2 tbsp raw cacao powder
  • 1 tbsp of coconut oil

Chocolate filling:

  • 1 avocado
  • 1 1/2 banana (if you have large bananas, 1 will be enough)
  • 1/2 cup raw cacao powder
  • 4 tbsp of 100% date syrup
  • 1/2 cup coconut cream from chilled can, scooped from top

The crust:

Start with blending the almonds and walnuts together in a food processor or strong blender. Then add in the dates, coconut oil and the raw cacao powder. Blend for another 1-2 minutes, add in a splash of water if it’s to dry. When you got the right texture take your cake tin and make sure that it’s a non stick tin or put in a baking sheet, otherwise it will be a bit tricky to remove. Then press down the crust mixture until the bottom and the sides of the tin are fully covered.

Chocolate filling:

Put all of the ingredients in a blender and blend until you get a nice and creamy texture without any lumps. Then pour the mixture on top of the crust and spread evenly. Optionally you can top the cake with some berries or edible flowers what ever you feel like. I chose to top mine with some beautiful edible flowers, I think it looks so girly and pretty! When you’re finished, put it into the fridge for minimum 4-5 hours before serving.

Lots of love, Janna
